Happy 16th Birthday to Ben!

Happy 16th Birthday Ben!  
How sweet it is!
We celebrated Ben with a fancy dinner out to St. Elmo's Steakhouse, the oldest steakhouse in our state which opened 1902!  Cake and presents at home followed dinner.  
The celebration continued thru the weekend with a trip to Phoenix for a Nascar race!  Unfortunately Nick wasn't able to join us, he had a school business conference to attend.    






It was a beautiful sunny day for the race!  We had seats that were under cover, out of the sun which was good because it got hot quickly in the direct sun!  Christopher Bell was the winner in the exciting photo finish.  Ben's favorite drive, Kyle Busch came in 8th.  








A week later Ben's dream of getting a Miata with pop up headlights came true!  
Eric found this gem from 1995 for Ben.  
Ben has a plan to attend college to study to become an auto engineer.   He has wanted a Miata to 'tinker with' for some time.  
Besides cars, Ben still enjoys playing the piano and being a Boy Scout.  He has become more serious about Scouts recently, and is looking forward to making advancements this summer with a goal of reaching Eagle Scout.  He has 2 years to complete this goal.  
Ben loves all animals, has the kindest soul, and is our noticer of sunsets.  
We love you Ben!  I hope year 16 is the best for you!

Busy Day!

Nick and I went to cheer on Phoebe and her friends at the Show Choir competition.  I had never been to a competition before, it was really fun!  We saw another school compete as well as ours.  I'm so impressed with the singing and dancing talents of these young adults.   
I really enjoyed spending the day with Nick, too.  We had lunch together and lots of meaningful conversations while driving.  



Later that night Eric and I took a cooking class with Dave and Debbie at Sur La Table.  The theme was 'An evening in Paris'.  We made Coq A Vin, a winter salad, and my favorite, Chocolate SoufflĂ©!  We spent a couple of hours cooking and then enjoying the fruits of our labors at the end!  We learned a few tips and tricks and of course purchased a few must have kitchen items!  
I still have dreams about that soufflĂ©!  I just need to purchase those ramekins and I'll be making them at home!
